15 Mar, 2017 The Twister Fruit Picker®: Pan Fried Cod in a Citrus Basil Butter Sauce
In the warmer climates, oranges and lemons are ripe and ready to harvest. Orange trees have dense foliage and lemon trees have thorns. The Twister Fruit Picker® is designed to pick them easily without damage to you, the tree or the fruit. Using fresh citrus when cooking adds more flavors. We found a delicious recipe that uses both fruits: Pan Fried Cod in a Citrus and Basil Butter Sauce.
This recipe is not only healthy but also easy to make and perfect for a light dinner. We used fresh cod because it was readily available where we live, but frozen cod would also work. The recipe was easy to follow.
While the fish is marinating in the yummy lemon/orange zest mixture, it is easy to prepare the ingredients for the sauce and get your rice or quinoa cooking.
We served the fish over a brown, red, wild rice blend. It was very tasty and we would give it a 5-star rating for taste.
Cook’s note – the recipe recommends “cooking the sauce until it has thickened slightly and reduced.” For us, the sauce was a little watery (very juicy oranges) and next time we might try to thicken the sauce with a little cornstarch.
