In some regions you can still harvest Valencia oranges in June or July. We used Love Beets, which come precooked in the vegetable section of most grocery stores. Since fresh beets are now available in your backyard garden, just cook some fresh beets before making the recipe. The combination of the sweet carrots, tangy/sweet beets and orange juice makes this a particularly tasty side dish when serving pork. Tip: We steamed the raw carrots so they were partially cooked before baking them in the oven with the beets (which are precooked). This will help to guarantee that both beets and carrots bake evenly in the oven.
